Use of Foods Based on Bee Drone Brood: Their Sensory and Microbiological Evaluation and Mineral Composition

The aim of the work was to evaluate safety bee drone brood in terms risk possible contamination with heavy metals, microbial contamination, and sensory acceptability. Bee dried at a temperature 80 °C hot air oven (DBO) lyophilized (DBL) were used. Sensory evaluation performed on an oatmeal ball (O-B) (DBO-B). For determination minerals other elements DBO, spectrometric analysis content as follows: Fe 60.87 µg/g, Cu 54.83 Zn 257 Ag 82.7 Pb 2.1 Au 1.2 Ca 1336 Sr 3.13 Zr 1.67 Bi 3.87 Br 1.95 µg/g. detected lead dry matter (2.1 µg/g) high above limit set for crustaceans (0.4 µg/g). By comparing assay values, no statistically significant difference between freshly DBO after month storage detected. contains microbes far below legal limits it is good source calcium, iron, zinc. Except juiciness, consumers rated O-B better than DBO-B. A (p < 0.05) found only taste.
